Combine cuajada cheese, cornstarch, tapioca starch, brown sugar, eggs, salt and butter in a bowl, and mix until a soft dough is formed.

Add baking powder and knead to mix.

Roll the dough into 1-inch balls.

In a deep pot, heat the oil to 325°F. Carefully add the balls to the oil and fry until golden brown. This takes about 20 minutes.

What You'll Need

  • 2 cups grated cuajada cheese (or substitute with queso fresco)

  • 1 cup cornstarch

  • ½ cup tapioca starch

  • ¼ cup brown sugar

  • 2 eggs

  • 1 teaspoon salt

  • 1 tablespoon butter

  • ⅛ teaspoon baking powder

  • Vegetable oil for frying
